Low Carb Jambalaya - Creamy Cheesy Cauliflower Rice Jambalaya - super easy to make and tastes fantastic!

Smoked sausage, poblano pepper, bell pepper, onion, garlic, Rotel, butter, cajun seasoning, sour cream, and cheese.

You would never guess it had cauliflower rice in it! Ready in about 30 minutes. Great for Mardi Gras celebrations and an easy weeknight dinner.
